The readme.txt in SVN states that Ant 1.6.2 can be used, but if you use that to run ant -projecthelp you get:

Buildfile: build.xml
[copy] Copying 2 files to /Users/henri/opensymphony/quartz
/Users/henri/opensymphony/quartz/build.xml:53: You must specify at least one of targetOS, dirSep, or pathSep

Things do work with Ant 1.6.3+.

The easiest thing to do would be to update the documentation - though Ant 1.6.2 is the default Ant that ships with OS X.
